Soothing, packed with nutrients and anti-inflammatory...


Ingredients (serves 2)


2 medium sweet potato

200g broccoli

2 medium courgettes

400ml bone broth

3 handfuls of spinach

3 cloves garlic (omit if following FODMAP diet)

½ teaspoon turmeric powder

1 tablespoon olive oil

Salt to taste


Directions


1. Heat your oven to 220 (conventional)/200C (fan). Place chopped sweet potatoes and broccoli into a large tin, drizzle with olive oil and salt.

2. Roast in the oven for 25-30 mins or until softened.

3. Add the chopped garlic into a pan in the remaining oil. Sizzle for about 5 mins before adding the courgette and frying for another 10 minutes.

4. Add the bone broth and spinach into the pan and allow to simmer on a low heat for around 5-10 minutes.

5. Once the vegetables have been roasted, mix all ingredients together in a saucepan. Use a hand blender to pulse the ingredients into it is blended smooth.
