What looks like a trifle, is full of healthy fats, low in sugar and gut loving?...
Ingredients:
20g chia seeds
200g coconut yogurt
150g fresh or frozen raspberries
Optional:
20g nut butter to top
Directions:
1. If using frozen berries, leave them out to defrost for around 30 mins.
2. Mix together the berries and the chia seeds in a blender and pulse for a few seconds.
3. Place mixture in the fridge for 10 minutes.
4. Layer the chia mixture with coconut yogurt in a bowl of choice.
5. If you feel like getting in some extra healthy fats, add a spoonful of peanut or almond butter on top, enjoy!
